Salad with eggplant, tomatoes and cucumbers

Delicious, juicy seasonal salad with eggplant, tomatoes and cucumbers is perfect for meat dishes. Perfect as an independent dish for dinner.

Ingredients

• eggplant - 1 pc.
• tomato - 1 pc.
• cucumber - 1 pc.
• garlic - 3 cloves
• parsley - 1 bunch
• vegetable oil - 2 tbsp
• sour cream - 2 tbsp
• salt - to taste

Directions

1. Cut the eggplant, salt and fry in vegetable oil until golden brown. Let cool completely. Cut the tomato into medium pieces. Prepare the dressing, for this, grate the cucumber on a coarse grater, garlic on a fine grater, finely chop the greens.
2. Place all ingredients in a bowl, salt, add sour cream and mix well. Add the cooled eggplant, dressing to the tomatoes, mix the salad. Put on a dish or in a salad bowl and serve. The salad is light and tasty, goes well with meat. Served to guests at the dacha with barbecue and meat on the grill - everyone liked it very much.
