Salad with smoked chicken, persimmons and curd cheese balls with almonds is an incredibly tasty and unusual salad in which all the ingredients are so well combined that you can’t imagine better. Crispy fresh lettuce, soft sweet persimmon, juicy smoked chicken breast and tender creamy balls of cream cheese, almonds and parsley merge into an incomparable unique taste that overwhelmed me when I first made this salad. I expected it to be tasty, but not so much, and the result was an amazingly pleasant surprise for me.
Thanks to its colorful and spectacular appearance and surprisingly harmonious interesting taste, a salad with smoked chicken, persimmon and curd cheese balls with almonds will become a worthy dish on the festive table or will color your everyday dinner with bright colors.   1. Let's prepare all the ingredients. We remove the skin from the smoked chicken breast and separate the meat from the skeleton. Wash and dry persimmon, lettuce and parsley.
  2. For this salad, it is important to choose the right persimmon: it should be ripe, not astringent, sweetish, but at the same time remain dense and not fall apart in mashed potatoes when cut. If the persimmon turns out to be astringent, the salad will be irrevocably spoiled; if the persimmon is overripe - just ugly. Curd cheese is better to choose with a thick, dense texture, so that it is easier to form balls from it in the future.
  3. Cut the smoked chicken fillet and persimmon into equal medium-sized cubes. Finely chop parsley and almonds.
  4. If desired, almonds can be peeled, roasted, or both. I used ordinary unroasted almonds and did not remove the skin from it, since this moment is not fundamental for me.
  5. Tear lettuce leaves into random pieces. Mix lettuce, chicken and persimmon in one bowl, add salt to taste, black pepper and olive oil. Mix well.
  6. Combine chopped almonds and parsley with curd cheese and mix thoroughly until all ingredients are evenly distributed.
  7. Put a mixture of lettuce leaves, chicken and persimmon on a serving plate. With the help of two teaspoons, we form small balls from the cheese mass and place them on top of the rest of the ingredients on the dish. If desired, lightly sprinkle the salad with freshly ground pink pepper. Salad ready.
