Salmon balik has always been considered an expensive gourmet product, which was rarely bought on holidays. Its delicate texture is ideal for small canapes, as well as for eating in chunks.

  1. Combine sugar, salt, 2 peppers, cloves, bay leaf and grate the salmon fillet, divided into convenient pieces, with the resulting mixture.
  2. Refrigerate fish overnight (8-10 hours). In the morning, rinse the fillets and pat dry with a paper towel.
  3. Prepare a kind of pillow for smoking - mix rice, cinnamon and black tea, put on foil.
  4. Take a frying pan with a thick bottom, heat it over high heat. Put the foil with the mixture in the pan, then - the wire rack, on top of it - the fish and cover everything with a lid.
  5. Smoking time on one side is 15-20 minutes. Bon Appetit!
