  1. Dice the onion and crush the garlic. Cut the bell peppers into strips. Cut the tomatoes and sausage into cubes.
  2. Heat the oil in a large deep frying pan, fry the onions and garlic. Put tomato, bell pepper to them, salt and pepper, mix, cover and simmer over low heat for 10 minutes.
  3. Add the sausage to the vegetables, mix, make a depression with a spoon and beat an egg into each of them, lightly salt them.
  4. On low heat, bring eggs to the desired consistency, without closing the lids.
  5. Place the green salad on a plate and place the cooked Flamenco eggs on it. Sprinkle with coarsely chopped parsley.
