Shopska salad, a classic of Bulgarian cuisine.

  1. Remove the core from the pepper and send it to the oven, heated to 200 degrees, for 20 minutes. Then cover, transfer it to a bag or cover with a film and let cool.
  2. Peel the cooled pepper and cut into strips.
  3. Peel cucumbers and cut into thick rings. Cut the tomatoes into comfortable pieces that fit in your mouth, and the onion into half rings.
  4. Grind the parsley, grate the cheese on a coarse grater.
  5. Mix vegetables and parsley in a large bowl, adding olive oil and vinegar to them. Sprinkle cheese on top and garnish with olives.
