  1. Peel the celery from coarse fibers and chop finely. Cut the red onion into very small cubes and rinse with cold water. Throw in a colander to glass the water, pat dry with paper towels. Combine shrimp, celery and onion.
  2. In a small bowl, combine sour cream, mustard and chili sauce, and season with salt and pepper. Season the salad and stir.
  3. Cut the cucumber into 14-16 slices. Place the salad on top of each. Chop the chives into small pieces and garnish the appetizer before serving.
