Delicious Cauliflower Puree Soup!

  1. You will need a heavy-bottomed saucepan to make this soup. Pour olive oil and butter into a saucepan and heat. Finely chop the onion and garlic. Fry them in oil until transparent.
  2. Peel the potatoes and cut into small slices. Rinse the cabbage and disassemble into inflorescences. Put chopped potatoes and cauliflower in a saucepan with fried onions. Season with salt and cook until the potatoes are tender.
  3. Pass the cooked vegetables through a blender to get a homogeneous mashed potatoes.
  4. Put the puree in a saucepan, add water and bring to a boil. Add sour cream and grated cheese to the soup. Heat 3-4 minutes until the cheese is melted. Cut the bread into small cubes and bake in the oven until golden brown. When serving, ladle the soup into bowls. Put crackers and a sprig of herbs on top. Bon Appetit!
