Soup with beans and smoked chicken is a great variant of bean soup: fragrant, rich and very, very tasty. The cooking process itself is very simple, you just need to boil the beans in advance. The taste of smoked meat is very, very suitable for beans, perfectly complementing it.   1. Let's prepare all the ingredients. Boil the beans in advance until tender, strain one or two cups of boiled bean broth and leave for further action.
  2. You can, of course, use canned beans, but I prefer regular boiled beans. In addition, bean broth is useful in this recipe.
  3. Peel the onions, carrots and garlic, wash and dry the herbs. Remove the skin from the smoked chicken breast (I don’t use it, so I throw it away right away) and separate the meat from the skeleton.
  4. Pour the skeleton from the smoked breast with cold water, add the bay leaf and set to cook over medium heat for 25-30 minutes after boiling.
  5. We cut the chicken meat into small cubes, onions and carrots - into small cubes, garlic - into thin plates. Greens finely chop.
  6. Add olive oil to a deep frying pan and heat over medium heat. Once the pan is hot, add the onion and simmer, covered, until translucent, stirring occasionally.
  7. When the onion is ready, add the carrots and fry-stew until the carrots are light golden.
  8. After the carrots acquire the desired color, add chopped garlic and simmer everything together until the garlic softens slightly and has a pleasant garlic aroma.
  9. Add tomato paste or tomato sauce, mix thoroughly and simmer the vegetables for another 5 minutes.
  10. We remove the skeleton and bay leaves from the pan, add chopped smoked chicken, boiled beans and bean broth. We cook for 10 minutes.
  11. Add vegetables with tomato paste, all spices, mix and continue to cook for 5 minutes.
  12. Add chopped herbs, mix and turn off the heat. Leave the soup to infuse for 10-15 minutes and you can serve.
  13. Fragrant, rich soup with beans and smoked chicken can, if desired, be served with croutons. But I just like it.
