  1. Peel the potatoes. Cut into thin slices.
  2. Pat dry with a paper towel.
  3. Peel and chop the onion.
  4. Pour oil generously into a heavy-bottomed pan and heat well.
  5. Put potatoes in hot oil.
  6. Add onion. Mix. Onions and potatoes should be completely dipped in oil.
  7. Salt. Cover and fry until tender.
  8. Drain the oil.
  9. Break eggs into a bowl. Salt.
  10. Beat with a whisk until smooth.
  11. Add potatoes and mix well.
  12. Heat some olive oil in a frying pan.
  13. Lay out the potato and egg mass, smooth out.
  14. Let the eggs thicken.
  15. Turn the omelette using another skillet or large plate.
  16. Put it back in the pan and fry on the other side until the eggs are completely thickened.
  17. The omelet is ready.
