Pork roast in milk is a juicy home-cooked meal for family holidays or weekends when the whole family gathers at the dinner table.

Inviting full-flavored pork in milk sauce appeals to both adult and young gourmets because the meat retains all its useful properties and comes out extremely juicy thanks to stewing.   1. Rinse the pork thoroughly under cold water and tie it with a kitchen cord so that the meat does not lose its shape during stewing.
  2. Peel and slice the garlic. Using a sharp knife, make small cuts in different parts of the piece of meat to stuff the meat with the garlic. It is best to do this 2 - 3 hour before cooking or leave it overnight. In this case, the meat will absorb the aroma of garlic and marinate well.
  3. Rub the pork loin with salt and pepper to taste. Preheat the oven to 160-180 °C.
  4. Melt the butter in a deep casserole, add the oil and fry the pork on all sides until golden.
  5. Peel the onions and carrots, rinse and cut in half. Add vegetables to the casserole along with bay leaf and rosemary twigs. The greens will give the dish a rich spicy aroma.
  6. Add four glasses of milk to the vegetables and bring to a boil on the stove. While cooking, the milk will resemble soured milk, there is no need to panic — it should be like that.
  7. Cover the roast with the lid and keep in the oven for 2 hours until cooked. Remember to turn the meat over at least once so that the pork is stewed properly.
  8. Remove the pork from the pan and wrap it in foil to keep the meat hot and juicy.
  9. Remove the herbs, carrots, and onions from the broth. Keep the remaining broth on the stove until its volume is reduced to 300 mL. After that, blend the broth with a blender.
  10. There is no need to be disappointed in case the sauce is too thin. Fried flour, a thickener, or corn starch will set things right. Dissolve one of the ingredients in water and pour it into the boiling sauce while stirring. Add your favorite spices.
  11. Remove the cord from the cooked meat, and cut it into thin slices. Put the pork on a warm plate, and add the spicy milk sauce. Sprinkle the dish with dill or parsley generously.
  12. Serve at the table and enjoy the unparalleled taste!
