Braised zucchini is a great side dish, light vegetable snack, or a healthy stand-alone meal. Stewed zucchini is cooked without oil in its own juice. This dish will take about 20 minutes to cook.

  1. Rinse the zucchini and tomatoes. Cut the zucchini into half rings (if necessary, get rid of the hard seeds and tough skins). Remove the skin from the tomatoes. It will be easier to do this by placing the tomatoes in boiling water for a couple of minutes and then in cold water. Cut the tomatoes into small cubes.
  2. Peel the onion and garlic. Cut the onion into half rings, the garlic into slices.
  3. In a skillet, bring the vegetable stock to a boil. Add chopped onions and garlic to it. Let it simmer for 3-4 minutes. Stir constantly.
  4. Add tomatoes to onions and garlic, stir.
  5. After the onion and tomatoes have thickened a little, add the zucchini. Salt, add spices - Provencal herbs and paprika. If you have smoked paprika, add it carefully, it has a very intense flavor. You can also do with the usual red paprika. Mix everything and leave to simmer under the lid for another 10 minutes. The stewed zucchini is ready! Serve as an appetizer, side dish for meat or poultry. Bon Appetit!
