Recipe for cooking stuffed vegetables or assorted vegetables. The dish turns out to be not only very tasty, but also very healthy.

  1. We wash all the vegetables thoroughly. We clean the bell peppers from the insides.
  2. We take out all the insides from the tomatoes, squash, eggplant and zucchini and cut into small pieces.
  3. Fry the pieces together with the onions in sunflower oil until the vegetables acquire a golden, delicate color.
  4. We prepare the filling. Mix the pre-cooked rice until half cooked with raw potatoes, egg and minced meat grated on the smallest grater. Put the soaked white bread and mix well. Season the filling with spices, pepper, salt.
  5. We fill the cooked vegetables with the resulting mass. We put the stuffed vegetables in a saucepan and put the fried insides of vegetables on top of them, salt, fill with water and, covered with a lid, set to simmer for 20 minutes.
  6. Best of all for garnish boiled potatoes and salad of tomatoes and cucumbers. Bon Appetit!
