Sweet omelet with raspberries and cottage cheese

Bright and cute sweet "pizza" - a fragrant omelet with cottage cheese and raspberries. Raspberries and curd go well with a sweet egg base. Such a delicious and beautiful breakfast is a great start to the day!

  1. If desired, raspberries can be replaced with any fresh berries - strawberries, currants, blackberries.
  2. Combine eggs, milk, turmeric and salt in a deep bowl. Add some sugar (1 teaspoon).
  3. Whisk the ingredients vigorously until the egg mixture is smooth.
  4. Combine cottage cheese and 1 teaspoon of sugar in a separate bowl. Stir.
  5. Heat vegetable oil in a skillet. Pour the egg mixture into the skillet and cook over medium heat for about 1 minute, until lightly set at the edges.
  6. On top of the liquid omelet, spread the sweet cottage cheese "islands" so that there is a narrow free edge.
  7. Put raspberries in the space between the curd. Reduce heat to low, cover skillet with lid.
  8. Cook the omelet for about 6-7 minutes, until the omelet mass has set completely. The raspberries will let the juice out, and the curd will melt slightly and spread over the surface of the omelet.
  9. Gently transfer / slide the omelet from the pan onto the plate using a spatula. Garnish the sweet raspberry omelet with basil leaves if desired to add color and flavor to the dish.
  10. Such a delicious and healthy omelet can be served with sour cream, honey or jam.
