Tasty Rustic potato salad with fried mushrooms

I advise everyone to try this delicious rustic potato salad with mushrooms.

Ingredients

  1. Wash the mushrooms well. If large, then cut into 2-4 parts (I cut each into 2 parts and left a few very small ones whole).
  2. Cut the onion into cubes and cover with cold water, leave for 10-15 minutes.
  3. Pour 3-4 tbsp into the pan. l. oil, immediately salt and pepper (mushrooms are like a sponge, they immediately absorb spices). Fry for 5-7 minutes.
  4. Meanwhile, cut the cucumbers into small cubes.
  5. Remove the fried mushrooms from the stove, let cool.
  6. Meanwhile, peel the potatoes and cut into cubes. Put in a bowl in which you will mix the potato salad with mushrooms.
  7. Add cucumbers, cooled mushrooms and onions drained from water to potatoes.
  8. Add chopped greens to potato salad with mushrooms.
  9. Fill with vegetable oil (3-4 tablespoons). Taste for salt and if undersalted, add salt.
  10. Village salad with potatoes, mushrooms and cucumbers can be served immediately, or you can cool it in the refrigerator for a couple of hours.
