Nice and "trendy" breakfast - toast with avocado, tomato and egg. The perfect combination of scrambled eggs, crispy bread and a juicy avocado salad with tomatoes and basil. A good way to start the day not only tasty, but also right!

  1. Prepare foods according to the list.
  2. I used whole grain bread, but you can use any bread you like. It is best to choose an avocado ripe - it is softer and has a bright, rich taste. Fresh garlic can be replaced with a couple of pinches of dried garlic to soften the garlic flavor.
  3. Grease a frying pan with vegetable oil and heat well over medium heat. Crack the eggs into a skillet and fry for about 2-3 minutes, until the protein sets.
  4. I left the yolk runny, but if you prefer a fully cooked yolk, then cover the pan and cook the eggs not 2-3, but about 3-4 minutes.
  5. Then transfer the cooked eggs to a plate.
  6. Cut the avocado in half, remove the pit and carefully remove the pulp. Cut the avocado flesh into small cubes.
  7. Wash the tomato and cut it into small cubes. Rinse the basil and chop finely with a knife. A few basil leaves can be set aside for serving.
  8. Combine chopped avocado, tomato and basil in a deep bowl. Season with salt and pepper. Peel the garlic, finely grater and send to a bowl.
  9. Squeeze about 1 tablespoon of the lemon directly into a bowl. a spoonful of juice.
  10. Stir, kneading slightly with a fork, - this will make the salad a little more homogeneous.
  11. Fry the slices of bread in a skillet over medium heat for about 1 minute on each side, until golden brown. If desired, you can not fry the bread, but dry it slightly in a toaster.
  12. For each slice of bread, place about 2-3 tbsp. tablespoons of avocado and tomato salad.
  13. Place scrambled eggs on top of the vegetables. Season with salt and pepper if desired, adjusting for the presence of salt in the tomato and avocado salad.
  14. Place 1-2 basil leaves on each toast.
  15. Toasts with avocado, tomato and egg are ready. It is best to serve them straight away, while the bread is still crispy and the egg is warm.
