Minestrone is a traditional Italian soup. Mixed vegetable soup is very easy to make, but all vegetables take a long time to prepare.

  1. Soak the white beans overnight the day before. Peel the peas. Chop tomatoes and fresh onions.
  2. Cut the green beans into pieces.
  3. Cut the courgettes, carrots, turnips and potatoes into small pieces.
  4. Chop the asparagus and boil a little in salted water.
  5. Boil white beans in salted water, but so that they do not boil. Drain.
  6. Heat olive oil in a large saucepan, add onion, salt, pepper, fry for a minute.
  7. Add turnips, carrots and potatoes. Mix well.
  8. Add zucchini, beans, green beans and asparagus. Stir well and fry for 5 minutes, stirring occasionally. This pre-cooking of vegetables in oil is important for flavoring the minestrone.
  9. Add 2 liters of water and chicken cubes. Bring to a boil, then reduce heat and simmer until all vegetables are well cooked.
  10. Then add the tomatoes and cook for another 10 minutes. Serve hot.
