Italians know a lot about simple but delicious food. Traditionally, they prepare a wedding soup with turkey meatballs. I also decided to share with you this simple recipe for turkey meatball soup!

  1. First, prepare the meatballs - pass the fillet through a meat grinder, mix with breadcrumbs, grated cheese, chopped parsley, onions and garlic, as well as eggs and spices. All my vegetables and herbs were dried, but you can add fresh ones. Mix until smooth.
  2. We sculpt meatballs, and in parallel we are already putting a saucepan with broth. When it boils, toss in the meatballs and chopped endive. Reduce the fire.
  3. Cook over low heat until the endive is tender and the meatballs are light. now add the risoni and spices, keep it on low heat for another 5 minutes, and then turn off the heat and keep the dish under the lid for another 5 minutes.
  4. Done! Pour in and serve when the soup is slightly infused. and the risoni will swell. Yummy!
