Tuscan Bean and Parmesan Salad

Of course, it would be nice to use real Parmesan in this salad, but if you don't have access to it, don't be discouraged. Take "import substitution" and just increase the amount of filling.

  1. Throw the canned beans in a colander, rinse with boiled water if desired, dry. Transfer to a bowl, crush slightly with a pestle.
  2. Cut off the ends of green beans and remove the "strings", boil the beans in boiling water, 4 minutes. Transfer to ice water, after a couple of minutes, discard in a colander and dry.
  3. Chop the onion with medium feathers, crush and chop the garlic. Sauté the onion in 4 tbsp. l. olive oil over high heat, 2 minutes, stirring occasionally.
  4. Add garlic, stir for 20 sec. and remove from heat. Combine with white and red beans while the oil is hot. Add green beans, salt, let it brew for 10 minutes.
  5. Add basil leaves to the finished mixture, arrange on plates. Sprinkle with pepper and Parmesan cheese and serve immediately.
