Banana puree, flaxseed and almond milk make this healthy vegan banana bread very moist and tender. While this quick and easy vegan bread recipe is egg-free and dairy-free, it tastes just as delicious as the traditional version. You can add chocolate chips to it for more enjoyment.

  1. Preheat oven to 180 degrees Celsius. Lubricate a bread pan with a thin layer of butter (cooking spray) measuring 23 * 12 cm.
  2. Stir water and flaxseeds together in a small bowl. Let stand for a few minutes.
  3. Whisk almond milk, sugar, butter, vanilla, and flaxseed / water mixture in a medium bowl. Mash bananas. Combine flour, baking powder, cinnamon, and salt in a large bowl. Mix wet into dry ingredients until smooth. Add chocolate chips if desired. Transfer the batter to the prepared mold.
  4. Bake until golden brown, about 1 hour (check with a toothpick). Chill in the pan for 10 minutes, then transfer to a wire rack. Let cool for 1 hour before slicing.
