In the summer, the best option for me would be a salad of tomatoes and cucumbers, and in the spring, a vegetable salad with daikon and sesame is quite suitable - crispy, light and fresh. It is prepared quickly and simply, it turns out tasty and interesting.

  1. Let's prepare all the ingredients. We clean the carrots and daikon, wash the cucumbers.
  2. Remove the required number of sheets from white and Beijing cabbage (in my case, three sheets each). Cut the daikon, carrot and cucumber into thin strips. Finely chop the cabbage leaves.
  3. It is not necessary to use two types of cabbage, it is quite possible to get by with one. But I like this particular option: both with white cabbage and Beijing. They are different in texture and juiciness, and it seems to me that it turns out more interesting and tastier. You choose what suits you best.
  4. Combine all chopped ingredients, add olive or sesame oil, soy sauce, sesame seeds, salt and black pepper to taste.
  5. It is better to lightly roast sesame seeds in a dry frying pan first: this way its taste and aroma will become brighter. Also, for contrast, it is better to use black sesame seeds: with it, the salad will become more colorful.
  6. Mix together all the ingredients. Salad ready.
  7. Vegetable salad with daikon and sesame seeds will be a great addition to meat, fish or egg dishes. As for me, a fresh, juicy and crispy salad is just right for spring, when you really want something light and vitamin.
