For vegetarian and diet menus, you can make a delicious vegetable soup. Light and refreshing, it perfectly tones and lifts vitality.

  1. To prepare the dressing, chop the garlic and parsley with a knife. Mix with softened butter. Place on plastic and roll into a sausage. Send it to the refrigerator.
  2. Cut all vegetables into large pieces, pour 2 liters of water. Boil and cook for 20 minutes.
  3. At the end of the boil add the herbs and cook for another 5 minutes.
  4. Cover the soup with a lid and refrigerate for 4 hours.
  5. Strain the stock as no vegetables are needed.
  6. Peel the potatoes. Shorten the lower ends of the asparagus by 5 cm. Separate the white part of the onion and discard the green part.
  7. Blanch the peas and other vegetables separately. Make sure not to boil over.
  8. Pour the vegetables into the broth.
  9. When serving, add a butter sausage mug to each plate. Bon Appetit!
