Vegetarian zrazy is a favorite dish of Ukrainian cuisine, which I cook not with meat, but with carrots and Adyghe cheese.

  1. Boil the potatoes in their skins, cool, peel and puree them. Finely crumble the cheese and grate the carrots.
  2. Heat the pan and fry the carrots and cheese in it for about 10 minutes, then add the seasonings: turmeric, salt, ground chili and cream. At the last moment, add chopped greens and mix everything well. The filling for zraz is ready!
  3. Now we make the zrazy ourselves. To do this, wet your hands with water or lubricate with oil. In the palm of our hand, form a thick cake from mashed potatoes (if it turns out to be liquid, then add a little flour to the potatoes). Then put the filling on the cake and cover it up. It should be poured in good faith so that the filling does not float out during frying. Immediately roll in flour on both sides and fry in a skillet in oil. You can also bake on a baking sheet in the oven (at 180 degrees for 30 minutes).
  4. Serve ready-made zrazy with cream sauce. In order to prepare the cream sauce, use a blender to grind and mix all the ingredients intended for this sauce: cashews, grated ginger, cilantro, pepper, salt, water and lemon juice. Bon Appetit!
