  1. Wash the beets and potatoes, boil separately in their skins until tender. Allow to cool. Peel and cut into small cubes. Peel the onion, cut into the same cubes.
  2. Squeeze the cabbage and chop into strips about 3 cm long. In a large bowl, stir together the beets, potatoes, onions, cabbage and peas.
  3. Mix vegetable oil, vinegar and sugar. Season the vinaigrette. Season with salt and pepper to taste and stir.
