Biscuits with bananas and cinnamon

Delicate airy biscuits with banana slices in the middle are pastries that can win hearts. The cinnamon sprinkled on the cupcakes gives them an incredible flavor, perfect when paired with a baked banana!

Ingredients

  1. In a bowl, combine eggs and sugar.
  2. Beat the eggs with sugar with a mixer at high speed for 3 minutes, until a lush, light mass is obtained.
  3. Sift half the flour into the egg and sugar mixture.
  4. Gently fold in the sifted flour with a spatula.
  5. Then sift and fold in the second part of the flour just as gently.
  6. The finished biscuit dough should be fluffy, airy and without lumps.
  7. Peel the banana (you should get 140 grams of pulp).
  8. Cut the banana pulp into 12 circles (according to the number of future cupcakes).
  9. Divide the banana slices into 12 cupcake or muffin tins. I used silicone molds, so I didn't grease them with anything. It is better to grease molds from another material with oil or lay parchment capsules.
  10. Divide the biscuit dough between the molds, covering the banana slices.
  11. Bake banana biscuits in a preheated oven at 180 degrees for 25 minutes.
  12. Remove the finished cupcakes from the molds and put on a plate.
  13. Sprinkle hot cupcakes with ground cinnamon and leave to cool.
  14. It's dessert time, and it's time to serve the biscuit muffins with banana slices to the table.
