Another option for baking from butter, eggs and flour. This time the cupcake was baked with ripe bananas, pieces of dates and walnuts.

  1. Preheat oven to 180 degrees. Line the bottom of an 18x9cm tin with baking paper. Beat butter with sugar with a mixer until fluffy light mass. Add the eggs one at a time, beating well each time and adding one tablespoon of flour.
  2. Mash the bananas with a fork. Toss the bananas, date pieces, and walnuts into the batter. Stir in remaining flour and baking powder. Pour the dough into the mold, level the surface and press down on the corners. Bake from 1 hour to 1 hour 15 minutes. The cake should rise well and be firm to the touch (if necessary, you can cover the cake with foil). Let cool, remove and cut into slices.
