Cooking marshmallows is not as difficult as many people think.

Ingredients

  1. We clean the apples from the core and peel, cut into cubes 1.5 cm in size. We put it in a saucepan, add a little water, about a tablespoon and simmer under the lid until the apples soften. We break the puree with a blender while adding 200g of sugar. Sugar should be completely dissolved. Let the puree cool completely to room temperature.
  2. When the puree has cooled, we begin the second stage:
  3. Proteins are separated from the yolks. Beat gradually adding puree. Beat for a long time until peaks appear on the whisk.
  4. We set aside.
  5. How to prepare syrup with agar-agar:
  6. Pour agar-agar with 160 ml of water. and add sugar. If it turns out very thick, then add another 50 grams of water. Put it on the stove, bring to a boil, boil for 1 minute.
  7. We turn on the mixer again with proteins, pour in gradually without ceasing to beat the syrup with agar. The mass should be stable, while the agar will begin to cool and thicken.
  8. Put the mass in a pastry bag and form marshmallows.
  9. The size and shape depend on your imagination and bag nozzles!
