Muffins with spinach and cheese

Unsweetened muffins with spinach and feta cheese, made from natural yogurt dough.

Ingredients

  1. Turn on the oven to preheat to 180 degrees. Butter 12 muffin tins.
  2. Blanch spinach in boiling water until soft, 2 to 4 minutes. Drain, squeeze out as much liquid as possible. Chop the spinach.
  3. In a large bowl mix flour, baking powder and salt.
  4. In another bowl, beat eggs with butter and yogurt until smooth.
  5. Continuing to beat at low speed, add flour to the yogurt mixture, mix well.
  6. Add spinach and cheese, mix gently.
  7. Pour the batter into the prepared molds and place in the preheated oven. Bake muffins with spinach and cheese at 180 degrees for about 20 minutes.
  8. Remove the spinach and cheese muffins from the oven, let cool slightly, and then remove the muffins from the molds.
