Pies with mushrooms, cheese and millet groats

  1. First, let's prepare the brew. In a bowl, combine water and yeast and stir until dissolved. Then add sugar and flour.
  2. Stir and leave in a warm place for 1 hour.
  3. Then combine the finished dough with the rest of the ingredients for the dough: flour, water, salt, sugar and vegetable oil.
  4. Combine all ingredients and knead the dough by hand or with a mixer with hook attachments. Cover the dough with a towel and leave warm for an hour and a half.
  5. If necessary, you can add a little flour. The finished dough should be elastic and should not stick to your hands.
  6. Saute chopped onion and garlic in vegetable oil. Then add finely chopped mushrooms and fry until soft, evaporating excess liquid.
  7. Boil millet groats until tender in lightly salted water.
  8. Mix the fried vegetables and boiled cereals, then cool. Add the grated cheese to the cooled mass. Salt and pepper to taste, stir.
  9. Pinch off small pieces of dough and roll out with a rolling pin on a floured surface. Then put the filling in the center, pinch the edges.
  10. Place the pies on a parchment-lined baking sheet, seam side down.
  11. Leave the pies for 40 minutes so that they rise slightly, then brush with a beaten egg or milk and bake at a temperature of 200 degrees for 20-25 minutes.
