Vegetable broth is a simple and healthy diet dish. It can be served on the table as an independent dish or used as a base for soups, sauces, aspic. By adding any ingredients you wish, you can get a delicious soup, for example, with dumplings, meatballs or pieces of baked meat. By changing the ingredients, each time you will have a new tasty dish, and the base is still the same simple vegetable broth.

  1. Clean and wash vegetables. Cut the peeled onion into halves, cut the carrot and parsley root in half and coarsely chop the celery.
  2. Cut off and set aside (we won't use it) the dark green part of the leek. Cut the remaining white part in half, without cutting to the end and rinse under running water.
  3. Place vegetables in a saucepan, pour 1.5-2 liters of cold water and bring to a boil. Then reduce heat, add spices and simmer for about 1 hour.
  4. Add bay leaf and cover with a lid to thicken the broth. Ready-made vegetable broth can be used as a base for soups, sauces or aspic, or eaten without additional cooking, with a little salt to taste.
