Light Pea, Bean and Mint Salad

Green vegetables and herbs are good in every way. Firstly, they contain few calories, and secondly, they are extremely useful, and, finally, they are very beautiful. It's a pleasure to cook them, and even more so to eat

  1. Boil the peas and beans in plenty of boiling salted water, 5 minutes, drain and rinse the vegetables under cold running water to stop cooking. Dry.
  2. Finely chop the green onion, remove the leaves from the stems from the mint and chop too.
  3. For the dressing, combine lemon juice, zest, and olive oil, season with salt and pepper. Whisk until you get an emulsion.
  4. In a large salad bowl, stir together the beans, peas, onions, and mint. Drizzle with the dressing. Sprinkle with the crumbled feta and serve immediately.
