Bread salad with tomatoes (Panzanella)

Improvisations with the addition of olives, anchovies or canned tuna to the salad are quite welcome.

  1. Preheat the grill (top of the oven) to medium heat. Cut the bread into 2 cm slices, brush both sides with olive oil (2 tablespoons). Grill for 3-4 minutes. Cool and cut into large cubes.
  2. Cut tomatoes and peeled cucumbers into 2 cm cubes. Mix vegetables with bread and torn basil leaves. Drizzle salad with vinegar; drizzle with olive oil. Sprinkle with salt and pepper to taste. Mix and serve. Bon appetit!
