Loin in bacon is a very hearty and tasty dish that can be served as a separate dish or in combination with your favorite side dish. In the cold form, the loin has no less rich taste than in the hot. Therefore, when serving it, be guided by the opportunity and your cooking preferences.

  1. Peel the garlic and chop finely or pass through a garlic press. Rinse the pork piece well under running cold water, pat dry with a kitchen paper towel. Rub it with chopped garlic, ground pepper and salt.
  2. Now wrap the spiced pork fillet in pieces of bacon, pre-cut into thin slices. A piece of fillet should be completely wrapped in bacon. Sprinkle rosemary bacon on top.
  3. Place the loin on a baking sheet. Preheat the oven to 230 degrees, place the pan inside and leave to bake for 15 minutes. So the bacon will brown well and take on a very appetizing color. Then reduce the temperature to 170 degrees, leave to bake for an hour.
  4. Remove the pan from the oven when the meat is completely cooked. Let it cool for about 15 minutes, then cut into slices and serve. This dish can be served on its own or in addition to any side dish. As a dish decoration, you can use finely chopped parsley or dill!
