  1. First, take the meat, wash it under running water and dry with a paper towel. Clean the meat from the veins and film and cut on a cutting board with straws or cubes. You can take almost any piece of pork for quenching, but I prefer to work with fillets.
  2. We also wash and cut vegetables as follows: pumpkin - cubes, onions shred, tomatoes and garlic pass through a meat grinder, or with a blender grind into a filling.
  3. Pour a little vegetable oil into the pan and fry the pieces of meat until they become light golden. Transfer them to a plate to release the pan.
  4. In the same pan, fry the onions until transparent, put the pumpkin on top and continue to fry, stirring constantly, for 5 minutes. Then add the tomato - garlic filling, season with spices, cover the pan with a lid, reduce heat and simmer for another 15-20 minutes. I need to soften the pumpkin a bit before we add it to the meat.
  5. Return the meat to the pan, mix properly, cover and simmer until fully cooked for another 20 minutes. If desired, you can add sour cream,
  6. but even without it, the pumpkin will steam up and turn into a sweet and amazing sauce.
  7. Like any other stew that has a rich taste and aroma, it is better to serve with a side dish that will not compete with the brightness of taste. As a side dish you can offer rice, boiled potatoes, pasta.
  8. Serve pork stewed with pumpkin hot and always with gravy. You can decorate the dish by adding a sprig of dill or parsley, or just sprinkle with herbs.
