Potato salad with sauerkraut, pickled cucumbers and onions is a simple homemade dish that turns out to be very satisfying despite the absence of a meat component. Nutritious boiled potatoes, crispy pickled cucumbers and onions, as well as sauerkraut, which gives the salad a slight sourness - all these ingredients are perfectly combined with each other!

  1. Prepare all ingredients.
  2. Adjust the amount of mustard to your liking.
  3. Vegetable oil is suitable refined or aromatic.
  4. If the cabbage is very acidic, rinse it in cold water and squeeze out the liquid well.
  5. Wash the potatoes well and boil in salted water until tender. Cooking time depends on the variety and size of tubers. It took me 20 minutes on moderate heat for the potatoes to become soft and easily pierced with a skewer. Remove boiled potatoes from boiling water and cool.
  6. Peel the onion and cut into cubes or thin half rings. Add vinegar and sugar to the onion. Stir. Leave to marinate for 10-15 minutes.
  7. Pickled cucumbers cut into cubes. Add sauerkraut.
  8. Drain the pickled onion in a colander to drain all the liquid. Add the onion to the rest of the ingredients.
  9. Peel potatoes and cut into medium pieces. Add to salad bowl.
  10. Add mustard, salt, ground black pepper and vegetable oil. Stir.
  11. Potato salad with sauerkraut, pickled cucumbers and onions is ready.
  12. Salad can be served immediately.
