Quick paella with prawns and bell pepper

Classic Spanish paella includes several types of seafood and other ingredients. This quick paella is made with prawns, bell peppers and green peas.

Ingredients

  1. Heat olive oil in a large skillet over medium-high heat. Put the onion and red pepper in the pan, fry, stirring occasionally, for about 2 minutes.
  2. Then add the sausages and rice and cook for about 1 minute.
  3. Add fish broth and saffron to the pan and bring to a boil. Reduce heat, cover skillet and cook rice, stirring occasionally, for about 10 minutes, until semi-soft.
  4. Add green peas and shrimps to the pan, season with salt and pepper to taste, cover the pan and cook for another 5 minutes, until the rice is soft.
  5. Place paella on warm serving bowls, sprinkle with chopped parsley and serve immediately.
