Quick Salad of Legumes, Feta and Mint

It is especially delicious to add beans husked from fresh pods to such a salad. If they grow in your garden, do not be lazy, collect and use.

  1. Boil the legumes in plenty of boiling salted water, 5 minutes, drain and rinse the vegetables under cold running water to stop cooking. Dry.
  2. Finely chop the green onion, tear off the leaves from the mint and also chop.
  3. For dressing, combine lemon juice, zest and olive oil. Whisk until emulsified and season with salt and pepper.
  4. In a large salad bowl, stir together the beans, onions, and mint. Drizzle with dressing. Sprinkle with crumbled feta. Serve with a baguette.
