Red cabbage salad with feta and dates

Red cabbage salad with feta and dates has a lot of advantages - a small amount of ingredients, an unusual combination and a wonderful taste! Shredded red cabbage is paired with diced feta, toasted sesame seeds and sweet dates. It turns out very original.

  1. Prepare all ingredients.
  2. Lemon juice can be replaced with lime juice.
  3. Place a dry skillet over medium heat and heat well. Pour in the sesame seeds and, stirring constantly, brown until lightly golden (about 2-3 minutes).
  4. Pour the roasted seeds into a clean, dry flat plate and leave to cool.
  5. Chop the red cabbage into thin strips and place in a salad bowl. Salt and pepper a little. Pour in lemon juice. Thanks to lemon juice, the color of cabbage will become brighter and more saturated.
  6. Mix well and shake the cabbage with your hands to make it softer and release the juice.
  7. Wash the dates well, pat dry with paper towels and cut in half. Take out the bones.
  8. Cut the dates into thin strips or cubes. Add to cabbage. Stir.
  9. Cut the feta into small cubes and add to the rest of the ingredients. Approximately 30 g of feta can be left for serving. Stir gently.
  10. Finely chop the parsley leaves. In a salad bowl, add most of the chopped parsley and sesame seeds. Set aside some sesame seeds and parsley for serving.
  11. Pour in the olive oil. Stir. Salt and pepper if necessary, add lemon juice to taste.
  12. Transfer the salad to a clean plate and spread the remaining feta on top. Sprinkle with remaining sesame seeds and parsley.
  13. Red cabbage salad with feta and dates is ready.
  14. Such a salad can be served on its own or as an addition to meat and fish, vegetable or cereal garnish.
