Salad with beans and chicken hearts

Hearty and very tasty salad with beans, Korean-style carrots, mushrooms, chicken hearts and crackers. You can cook both on a festive table and on a weekday.

Ingredients

  1. Soak the beans overnight (about 8-12 hours) and season with salt. I took white small beans. In principle, it does not require mandatory soaking, but it cooks faster. It is not necessary that the beans stand for more than the specified time, the fermentation process may begin.
  2. The beans doubled in size overnight. Now you need to drain the water.
  3. Pour the beans with cold water, add 1 tsp. salt and cook for 1 hour. I often heard that you need to salt the beans at the end of cooking. But in order to prevent the beans from overcooking, salt them before cooking.
  4. If you want to make the salad faster, use canned beans.
  5. Wash chicken hearts. Ideally, you need to immediately cut off the vessels and excess fat, but it is more convenient for me to do this after they have been cooked.
  6. Salt, put on fire, bring to a boil. Then remove the foam, drain the water and pour cold water again. Cook for 40 minutes until done. After cooking, they will shrink slightly in size.
  7. When the hearts are ready, cut off the top.
  8. Wash the mushrooms and cut in half. I chose small mushrooms. If the mushrooms are larger, then they should be cut into 4 or even more parts.
  9. Heat a frying pan, add vegetable oil and fry the mushrooms until golden brown. Salt quite a bit.
  10. Now start making croutons.
  11. Cut off the rough crust so that the croutons are not very hard.
  12. Cut slices of bread into cubes.
  13. Salt to taste and add spices. Fry croutons in vegetable oil until golden brown. It will take 10 minutes.
  14. Salad ingredients are ready. Now you need to connect everything.
  15. Cut chicken hearts into circles.
  16. Mix white beans, Korean-style carrots, mushrooms and chicken hearts in a deep bowl.
  17. Dress the salad with mayonnaise. If you don’t like mayonnaise much, then the salad can be seasoned with olive oil and lemon juice.
  18. To stir thoroughly.
  19. Lastly, add croutons.
  20. Salad ready!:)
