Salad with pickled zucchini, feta cheese and pumpkin seeds is very tasty, juicy, light, but at the same time nutritious. Juiciness is given by zucchini marinated with onions, lettuce and greens. And feta cheese and pumpkin seeds add satiety!

  1. Peel the zucchini and cut into cubes.
  2. Peel the onion and cut into thin half rings.
  3. Put the zucchini and onion in a bowl, add vinegar.
  4. Mix and leave to marinate for 20 minutes.
  5. If desired, pumpkin seeds can be dried slightly (about 1 minute) in a dry frying pan to enhance their flavor.
  6. We wash the dill, shake off the water. Finely chop the dill and add to the bowl with the zucchini.
  7. Wash the lettuce leaves in cold water and pat dry. Then coarsely chop or tear with your hands. Add to the rest of the salad ingredients.
  8. Add salt and vegetable oil.
  9. Mix everything carefully.
  10. Break the feta cheese into pieces. We spread the salad on a dish, put pieces of feta cheese on top and sprinkle with pumpkin seeds.
