Crispy cabbage marinated with carrots, garlic, sweet peppers and onions is a versatile dish that can serve as a vegetable side dish or an independent snack. The addition of hot pepper and lime juice gives the dish a piquant taste and pleasant citrus notes. Try it!

  1. Prepare the necessary ingredients. Peel the onion and garlic. Remove seeds from hot and sweet peppers.
  2. Boil water and cool.
  3. Cabbage and carrots cut or grate into thin strips. Cut the onion into thin half rings.
  4. Cut half of the garlic into slices, keep the remaining cloves whole.
  5. Cut sweet pepper into thin strips, hot pepper into rings or half rings. Finely chop the green onion.
  6. Connect all prepared components. Add salt to taste (I add about 18-20 g).
  7. Mix thoroughly. Let the vegetable mixture sit for 5 minutes, then taste and add more salt if needed.
  8. Arrange the vegetables in a 3 liter jar, layering with whole garlic cloves.
  9. Add black peppercorns and dried thyme.
  10. Prepare the marinade. Squeeze the juice of half a lime. Combine chilled boiled water, vinegar and lime juice.
  11. Pour the marinade into the jar of cabbage and vegetables.
  12. Lightly pack the cabbage so that it is completely covered with the marinade. Seal the jar tightly with a lid and place in the refrigerator for 1-2 days to marinate the cabbage and vegetables.
  13. Spicy pickled cabbage with vegetables and lime is ready. If desired, sprinkle the dish with a pinch of green onions or other fresh herbs before serving.
