This ideal salad, bright, juicy, spectacular in appearance and taste, is a clear illustration of the fact that fruits and vegetables in one dish can be combined in the best possible way! A mix of tomatoes, cucumbers and sweet peppers is successfully complemented by slices of apricots, olives and feta cheese - it turns out a real delight for connoisseurs of original flavor combinations and those who adhere to the rules of a healthy diet, as everything else salad is light and very healthy!

  1. Prepare the necessary ingredients.
  2. To make the salad look spectacular, it is better to use tomatoes of different colors, for example, take one yellow and one red tomato.
  3. Olives can be stuffed if desired.
  4. Wash the cucumber, cut off the edges and cut into small cubes.
  5. Wash the sweet pepper, remove the inner partitions with seeds, and cut the flesh into squares.
  6. Wash the tomatoes, cut out the places of attachment of the stalks. Cut the tomatoes into cubes.
  7. Wash apricots, cut in half, remove pits. Slice the apricots.
  8. Cut the pitted olives into thin rings.
  9. Wash green onions and parsley, dry and chop.
  10. Combine prepared foods in a bowl or salad bowl: cucumbers, bell peppers, tomatoes, apricots, olives and herbs.
  11. Peel the garlic and pass through a press.
  12. For the dressing, in a bowl, combine sunflower or olive oil, balsamic vinegar, mustard, crushed garlic, a mixture of dry Mediterranean herbs, liquid honey, lemon juice, salt and ground black pepper.
  13. Stir with a spoon until a uniform dressing is obtained.
  14. Pour dressing into bowl with salad ingredients.
  15. Stir.
  16. Since feta cheese is very soft, it should be added last. Cut the feta into cubes.
  17. Put the cheese on the salad.
  18. And stir again gently.
  19. Vegetable salad with apricots, feta cheese and olives is ready. Divide it between plates and serve immediately.
