A nutritious vegetable salad with sausage and eggs is an excellent dish with obvious advantages: the availability of products, ease of preparation and great taste. Thanks to sausage and potatoes, the salad turns out to be quite satisfying, and fragrant cucumber, crispy radish and greens add spring freshness.

  1. Prepare all ingredients.
  2. Greens choose at your discretion. I have green onions and dill.
  3. Sour cream is suitable for any fat content.
  4. Wash and dry greens, radishes and cucumbers.
  5. Wash eggs and potatoes well and pour cold water in a saucepan. Add a pinch of salt. Put the saucepan on the fire and bring the water to a boil. Boil eggs for 10 minutes after boiling water, and potatoes for 15-25 minutes.
  6. The cooking time of potatoes depends on the variety and size of the tubers. Cool boiled eggs in cold water. Remove the potatoes from the broth and cool.
  7. Peel potatoes and eggs, cut into small cubes and send to a salad bowl.
  8. Cut the boiled sausage into the same cubes as the eggs. Add sausage to the rest of the ingredients.
  9. Cut a fresh cucumber into cubes and send to a salad bowl.
  10. Cut off the stems on both sides of the radishes. Cut the radishes into half circles and add to the rest of the ingredients.
  11. Finely chop the green onion and dill. Send to the salad bowl.
  12. Dress the salad with sour cream. Salt and pepper to taste.
  13. Stir.
  14. Salad with sausage, radish, cucumber and eggs is ready.
