Boiled crayfish sandwiches

  1. Peel off the crayfish (or shrimp) gently. Divide into 4 servings.
  2. Make a spicy sauce. Combine mayonnaise, lime juice, herbs, chopped anchovy fillets. Add black pepper to taste and mix well.
  3. Cut the bread in half, but not completely. Uncover and brush the inside with cooked spicy mayonnaise. Place lettuce and crayfish tails (or shrimps) mixed with peach wedges, top with mayonnaise. Serve sandwiches right away.
