Cheese soup with shrimps and rice

Soup with melted cheese, shrimps and rice - bright, aromatic, tender, with a wonderful "restaurant" taste. Preparing such a soup is simple and quick, especially if you use already peeled shrimp.

  1. Defrost frozen boiled shrimp (in the refrigerator). I got 300 g of peeled shrimp from 650 g of boiled-frozen unpeeled.
  2. Olive oil can be replaced with refined sunflower oil.
  3. Soft processed cheese can be replaced with processed cheese like "Friendship" in foil (grate on a fine grater before adding to the soup).
  4. Peel the shrimp.
  5. If you are using shrimp that has already been peeled, transfer it from the packaging to a plate, removing ice and water if necessary.
  6. Peel the onion and cut into small cubes.
  7. Peel the carrots and cut into thin semicircles or grate on a coarse grater.
  8. Heat olive oil in a heavy-bottomed saucepan over medium heat. Sauté the onion for 2 minutes, stirring occasionally, until soft.
  9. Add carrots to a saucepan with onions and fry for another 5 minutes over medium heat.
  10. Pour 1.8-2 liters of water into a saucepan with vegetables and bring to a boil.
  11. Add parboiled long grain rice, bring to a boil and cook for 12 minutes (according to package directions) over medium heat.
  12. Add salt and black pepper.
  13. Add soft processed cheese (or finely grated processed cheese in foil) to the soup with rice. Stir well to completely dissolve the cheese in the soup. Bring to a boil.
  14. After the soup has boiled, place the peeled shrimp in a saucepan. Bring to a boil again and turn off the heat under the saucepan.
  15. Cheese soup with shrimps and rice is ready.
  16. Pour the soup into bowls and add fresh basil herbs.
  17. Delicate creamy consistency of soup, soft grains of rice, bright carrots, shrimps - a combination worthy of a festive table.
