Cod and shrimp fritters

A Spanish dish of salted cod and boiled shrimp. Pancakes are prepared with a mixture of pea and wheat flour.

Ingredients

  1. Finely chop the cod.
  2. Pour cold water over the chopped cod.
  3. Finely chop the shrimp.
  4. Chop the onion.
  5. Chop the parsley.
  6. Mix wheat and pea flour.
  7. Add water, stir.
  8. Remove the cod from the water, add to the dough.
  9. Put the shrimps in the dough.
  10. Add onions and parsley.
  11. To stir thoroughly.
  12. Sprinkle with saffron, stir and let it brew.
  13. Heat the vegetable oil well in a frying pan (a sufficient amount, in a layer of about 1-1.5 cm). Spoon the dough into boiling oil, spread the pancakes slightly, so that they are almost completely covered with oil. Fry until golden brown on both sides.
  14. Put the finished pancakes on a paper napkin so that the excess oil is absorbed.
