  1. Prepare Caesar dressing. Pour water, lemon juice, yolks, mustard, salt and ground pepper into a small saucepan. Place the saucepan over medium-low heat and cook, stirring occasionally, until a thin sour cream consistency occurs, about 4 minutes. Pour into a blender or food processor, add anchovies, garlic and olive oil. Pulse until smooth. Put Caesar's dressing in the refrigerator.
  2. In a small bowl, combine shrimp, 1 tablespoon olive oil, rosemary, lemon juice and shallots and set aside.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Put the bread cubes in a preheated pan and fry, stirring occasionally, for about 2-3 minutes. Transfer croutons to a large salad bowl, add chopped tomatoes.
  4. Turn on the grill, place the shrimps on the wire rack and fry for about 4-5 minutes, turning once during cooking. Transfer the fried shrimp to a salad bowl, pour the dressing over the salad, stir and sprinkle with Parmesan. Serve the Caesar salad immediately, with the lettuce leaves.
