Olivier with shrimps, cucumbers and avocado

We offer a recipe for an unusual salad "Olivier". Olivier will be cooked from familiar products: carrots, peas, eggs, fresh cucumbers, and shrimp and avocado will become the new ingredients. We will season the Olivier with shrimps with homemade cashew nut mayonnaise.

  1. Cook carrots in salted water for 30 minutes. Peel the cooled carrots and cut into small cubes.
  2. Cook eggs hard-boiled in salted water for 10 minutes. Cool, peel and grind.
  3. Cook shrimps for 5-7 minutes in salted water. Peel the cooled shrimp.
  4. Peel the avocado, carefully cut it in half, remove the pit.
  5. Cut the avocado and fresh cucumber into cubes.
  6. Peel the onion and chop finely enough.
  7. Cooking homemade mayonnaise. Soak cashews in cold water for 2 hours. Drain the cashews and put the nuts in a blender. Grind.
  8. Add dry mustard, white wine vinegar, garlic, lemon juice, salt, pepper and olive oil to a blender. Beat all products thoroughly with a blender. If the mass turns out to be too thick, add 1 tablespoon of cold water.
  9. Mix all the ingredients of Olivier and season the Olivier salad with homemade mayonnaise.
