The national Thai dish called Pad Thai is rice noodles with eggs, fish sauce and classic Thai ingredients. Typically, the recipe includes shrimp or chicken, peanuts, bean sprouts. Traditional Thai fish sauce can be replaced with anchovy paste and soy sauce. Handle rice noodles with care - it is a delicate product, it is important not to allow it to boil.

  1. Boil water in a large saucepan. Remove from heat. Put the noodles in boiling water and leave for 3 minutes (until half cooked). Throw in a colander and cool under cold water.
  2. Combine the chili sauce, lime juice, sugar, soy sauce, and anchovy paste (if you still have Thai fish sauce on hand, add 2 tablespoons instead of the last two). Heat 2 tablespoons in a non-stick skillet. l. vegetable oil. Sauté the garlic over medium heat for half a minute. Add shrimp. Cook, stirring frequently, for about 3 minutes. Place the shrimp on a plate.
  3. Pour the remaining 2 tbsp into the pan. l. butter and place the noodles with the mixture of sauces. Cook for about 1 minute, stirring. Add bean sprouts, chopped green onions (5 cm each) and shrimp. Pour in the beaten egg. Stir and cook for about 2 more minutes. Serve the dish, additionally decorating to taste and desire.
