Rice, shrimp and mango salad

  1. Boil the rice in salted water until tender, according to the instructions on the package. Place the cooked rice in a colander, drain the water. Transfer to a bowl. Add the shrimp to the rice.
  2. Prepare the dressing. Mix all ingredients for dressing in a small bowl, whisk lightly. Pour the dressing over rice with shrimps, stir, cover and refrigerate for 10-15 minutes.
  3. Add mango, onion, almonds and mint to a bowl of rice. Season with salt and pepper. Stir well and serve.
