Salmon with shrimps and avocado in baskets

  1. Preheat oven to 180 degrees. Sprinkle 4 small wheat tortillas (or flat pieces of thin pita bread) lightly with vegetable oil. Place them (greased side down) in medium cupcake tins. Place the foil ball inside. Bake for 10-12 minutes until light golden brown. Take the baskets out of the oven, remove the foil and cool the baskets in the tins.
  2. For dressing, combine olive oil, lemon juice, lemon zest, brown sugar, salt and black pepper.
  3. Remove the skin from the salmon and cut the fish into pieces. Peel and cut the avocado into wedges. Peel and slice the orange. Place the fish, lettuce, shrimp, avocado, orange wedges, chopped green onions in the baskets. Drizzle with cooked dressing. Serve immediately. Bon Appetit!
